Why this structure

Pricing preparation separately stops a customer assuming "painting" means just the paint going on — prep is frequently the larger share of the actual labour.

How many coats should be included as standard?

Two is the common default for most interior work — state it explicitly, since "a fresh coat of paint" means different things to different customers.

What if prep reveals more damage than expected?

Flag in the quote that significant additional damage found during prep (beyond normal filling) will be quoted separately before work continues — don't let it silently become unpaid extra work.
